One of the problems with vegetables is the preparation required to eat them. Do your prep ahead of time so that you have easy access when you are hungry. Chop carrots, peel cucumbers and clean off some broccoli stems. Keep them at the easiest access point in the fridge, and you will be more likely to eat them and sooner.
