There are generally two sentiments about leftovers: you love them or you hate them. Some people survive by making one or two large meals a week and eating a bit each day, while other people cringe at the thought of warming up something that should have been eaten only once. The truth is, making use of your leftovers can save you lots of time and money; and a few tips will make them hardly recognizable as second-day meals. 

If you want a healthy spin on a leftover meal, chop it up and toss it in a salad! There are endless possibilities for salad fixings with leftover ingredients:

  • Pizza: Chop it up into squares and cook for 15 minutes in toaster oven. Now you have instant croutons.
  • Chicken: Saute chicken pieces in Italian dressing for five minutes, then toss with a fresh salad.
  • Soup: Strain the soup so you have just the broth. Heat for 10 minutes and then chill in the fridge for 30 minutes. Toss over salad for dressing.
  • Hamburger: Break apart tortilla chips and mix with reheated burger to create a taco salad. Add lots of cheese and some salsa.
