Can I sear meat and then refrigerate it to cook it tomorrow?
Sure. Searing does not "seal" the meat (as used to be believed), but it DOES caramelize sugars in the outer layers of the meat. Nothing in the refrigeration/reheating process would change that. Searing meat before braising (which a crock-pot does) is a standard way of enhancing flavor. ChaCha on!
