A controlled experiment that could have produced the data shown for either temperature or pH is if you take peroxidase enzyme and put it into peroxide and measure the amount of gas produced. Then you heat the peroxidase and put it into peroxide and see how much gas is produced. Peroxidase will break peroxide up into oxygen and hydrogen gas. The peroxidase could be placed in strong acid, etc. before entering the peroxidase.
