About Yogurt
Yogurt is a dairy product made by the bacterial fermentation of milk. The bacteria used to ferment yogurt, or yogurt cultures, acts on the lactose (milk sugar) producing lactic acid, which in turn reacts with the milk protein to give yogurt its creamy texture and tang. Yogurt from cow's milk is the most popular type, but it can be made from the milk of any mammal. Yogurt made from water buffalo, goat, camel, sheep and yak's milk are popular in many non-western cultures.
