How do Jews sanctify pork?

Jews Jews don't actually consider pork holy/sacred, which is what sanctify would mean. Kashrut is the set of Jewish dietary laws outlined in the Torah. By these laws pork is considered unclean. This is why they don't eat it. ChaCha!
