1. Bring 4 1/2 cups of water seasoned with 1 t of salt to a boil. 2. Slowly stir in 1 c of regular grits (not instant). 3. Reduce heat to low. 4. Cook for 30-40 minutes, stirring to prevent scorching. 5. Beat in 4-6 T of butter. Serve immediately.
