Egg Whites Swiss meringue buttercream is a frosting with egg white. Ingredients: 4 large egg whites 1 1/4 cups sugar 1 cup (2 sticks) unsalted butter, at room temp 2 teaspoons vanilla extract. Mix all ingredients except the butter, Whisk constantly in a double boiler until mixture comes to 160 degree fahrenheit. Beat until fluffy and cooled. Add butter and then beat until thick.
