How is a crayfish, or any arthropod which is encases in an exoskeleton, able to grow?
All arthropods have an exoskeleton which acts as a defense mechanism as it is a hard shell that protects them from their predators this exoskeleton also interferes with their growth as they can't grow within a hard shell. Because of this reason, all arthropods have to molt their cuticula and expand out of their exoskeleton The process of the molting of the cuticula in arthropods is known as ecdysis. Not only does the arthropod get to grow larger, their internal organs also get a chance to expand!
