No if your restoring your PS3 it wont wipe out your game stats or PSN account. For example, you can restore your computer but still have your yahoo account ready for when you come back. It's all stored on the network/internet, including your game stats. Just make sure you back-up your game saves onto a memory stick (that is if you want to).
