What is gluten?

Gluten (Latin for glue) is a protein found within grass-like grains, such as wheat, rye and barley. Gluten helps doughs rise and is used as a food additive to ensure stabilization of the food. People who have Celiac disease cannot eat gluten products as their immune system reacts adversely to it. ChaCha!

Not all foods from the grain family, however, contain gluten. Examples of grains that do not have gluten include wild rice, corn, buckwheat, millet, amaranth, quinoa, teff, oats, soybeans, and sunflower seeds.
