For easy and very good mini cheesecakes, combine 16 oz. softened cream cheese, 1 tbsp. lemon juice, 3/4 c. sugar, 2 eggs, 1 tsp. vanilla. Beat until fluffy. Place cup-cake liners in muffin pan. Place a vanilla wafer in each. Fill 2/3 way full with cheesecake mixture. Bake at 375F for 15 minutes. Cool. Top with cherry or blueberry canned pie filling.
