About Hot Pepper
Spicy food is a delicious treat, especially when you're into the heat! Usually that spice comes from some sort of pepper, or a pepper extract. Peppers come in all sorts of sizes, colors and varying degrees of heat. A pepper's heat is measured in terms Scoville Heat Units (SHU). A regular old bell pepper is 0 SHU, pure capsaicin (what gives peppers their heat) is 16 million SHU. The current record holder for the hottest pepper in the world is the Naga Jolokia (Ghost Chili) at just over a million SHU, however, the record may be broken after further testing of the Naga Viper Chili, a hybrid chili developed by the University of Warwick.
