Pickles are either cured in a vinegar or spice brine base, and it's the vinegar that adds the sour kick to pickles! Of course, the extra spices and type of cucumber used for pickling adds flavor as well.

Sourness is caused by the acids naturally present or added to foods. In the case of a pickle, it is due to the vinegar used in the brine.
