Champagne

Champagne is a type of sweet sparkling white wine named for the Champagne region of France, the only place in the world champagne comes from. The primary grapes used in the production of champagne are Pinot Noir, Chardonnay and Pinot Meunier.

About Champagne

The Methode Champenoise, or the Champagne Method is the traditional way making Champagne. Champagne is initially made like any other wine; crush grapes, let the skins settle, add yeast and let it ferment. For Champagne, a second fermentation is induced in the bottle by adding more yeast and some rock sugar. This second fermentation in the bottle creates carbon dioxide as well as more alcohol. According to the Appellation d'Origine Controlee, a minimum of 1.5 years of aging is required to develop all the flavor of the wine.

After the wine is aged, the bottle is turned upside down in a process called remuage so the lees settle in the neck of the bottle. After chilling the bottles, the neck is frozen and the bottle is uncorked. The pressure in the bottle, built up by a minimum of 1.5 years of carbon dioxide, forces the lees out of the bottle. A little syrup is added to ensure the proper amount of liquid int he bottle, and it is quickly capped again to preserve the carbonation.
