Careful distillation in traditional alambic pot stills, and aging in small oal casks are the keys to producing the finest brandy. Chandon ages its brandy in Limousin oak for nine years, using a mixture of old barrels formerly employed by cognac producers, and newer barrels. Nine years in this oak allows for the subtle extraction of tannins and vanilla-imparting rich, supple aromas, flavors and mouthfeel- the hallmakrs of quality handcrafted brandy.
