Hot sauce, chili sauce, or pepper sauce refer to any spicy sauce made from chili peppers and other ingredients. There are many varieties around the world. There are many recipes for chili sauces - the common ingredient being chili peppers. The peppers are infused in anything from vinegar, oil, water and alcohol to fruits and vegetable pulp.

Additional ingredients are often used, including those used to add extra heat, such as pure capsaicin extract and mustards. Many different types of hot sauce are produced throughout the world where fruits are mixed with chilis. These are different from the classic hot sauces which involve chilis as their main flavouring ingredient. Based on the extremely high number of hits in search engines for "hot fruit sauce" this is a truly international category of hot sauce. Chile Pepper Magazine runs an annual Fiery Food Challenge that includes a hot fruit sauce category which has international submissions (international award for kiwifruit hot fruit sauce).
