Pumpkins make spooky Halloween decorations and are a staple during the autumn months. The insides are great for pumpkin pie, pumpkin bread, cake, muffins, but what about the seeds? Pumpkin seeds can be just as good as the rest of the pumpkin. They can be roasted, fried, or even nuked in the microwave.

About Pumpkin Seeds

Pumpkin seeds are like sunflower seeds, or like a nut. They can be seasoned to be spicy, salty, sweet, or any combination of flavors. Pumpkin seeds are also a good source of protein, vitamins, and minerals.

Step 1 - Preparation

The first step is to remove the seeds from the pumpkin. The insides can be quite stringy, but between this mess are the seeds. To preserve more pumpkin flavor, just wipe off the seeds with a damp towel. If you prefer less of a pumpkin flavor, rinse them under tap water and dry off with a towel. For a stronger flavor, boil the seeds for 10 minutes in salt water and then dry before continuing.

Step 2 - Flavoring

The decision is yours, salty or sweet? You will need to decide that before continuing. For a more salty flavor add salt, cumin powder, cayenne pepper, hot sauce, or Worcestershire sauce to the seeds. If you are feeling like sweet pumpkin seeds, add sugar, ginger, maple syrup, honey, cinnamon or brown sugar to the seeds. If you want salty and sweet, add combination of any of the above ingredients.

Step 3 - Cook

You are ready to get the seeds cooking! Below are a few different methods, so try whichever one you want.
*Roasting
-Preheat oven to 300 degrees Fahrenheit and toss seeds in olive oil or margarine.
-Bake for 30 to 40 minutes or until they start to brown. Stir the seeds every 10 minutes.

*In a Skillet
-In a skillet heat one to two tablespoons of cooking oil or butter at medium heat.
-When the oil is hot, add the seeds and stir every 5 minutes.
-After the seeds have toasted and are lightly brown, remove from the skillet and place on a paper towel to remove excess oil.
-Add additional seasoning to taste.

*Microwave
-In a microwave safe dish, melt two tablespoons of butter or margarine.
-In the dish add the seeds in a single layer.
-Add any additional seasonings that you would like.
-Microwave for 8 minutes, stopping every 2 minutes to stir. After 6 minutes check them in one minute intervals until they are golden brown.

After every method, taste the seeds. If they aren’t the taste you were looking for, add seasonings to taste. Enjoy!
