School Lunch

School lunches are food options provided by the school for students who choose not to bring a lunch from home. Usually school lunches attempt to cover all the food groups, with a fruit or vegetable, a protein, a dairy and some sort of desert. Most American kids however usually get seasoned fries covered in chili and ranch unless it's pizza day. Recently there has been a push to provide healthier options, including removing soda vending machines from schools.

Recently nutritionists have started to experiment with redesigning the classic school lunch line, to gently nudge children into making better choices. An article in the New York Times ('Lunch Line', Oct. 21, 2010) cited the following successful findings of these experiments:

1) Putting the salad bar away from the wall and near the cash registers increased salad purchases by 3 times.

2) Putting the nutritious food at the beginning of the line instead of at the end, increased the amount purchased by 10 to 15 percent.

3) Calling 'corn' something more delicious, like 'creamy corn' increased sales by 27 per cent.

4) Offer a choice: students offered a choice between carrots and celery were much more likely to eat a vegetable then when only offered one choice.

5) Hide the ice cream in a closed container where it's not so tempting.

6) Make the cereal bowls smaller. 27% less cereal was eaten when bowls were downsized from 18oz to 14oz.
